Perkedel Jagung/ Bakwan Jagung (Indonesian Corn Fritters)

Super easy Indonesian style corn fritters that our family can’t stop eating and also tips to make sure you make good bakwan jagung.

Serves: 5-6 people

Main Ingredients

  • 3 fresh corn cobs
  • 1½ cups water
  • 1½ cups plain flour
  • ¾ cups rice flour
  • 2 stalks spring onions, thinly sliced
  • Bunch of chopped corriander
  • 3 eggs
  • 8 small shallots (minced)
  • 6 cloves garlic (crushed/minced)
  • salt
  • freshly ground balack pepper
  • oil (for deep frying)

To Prepare

  1. Separate corn kernals from the cobs and transfer into a bowl
  2. Combine all the remaining ingredients. Mix well and set aside.

To Cook

  1. Heat oil and then scoop in corn batter, a tablespoonful at a time. Cook for 2-3 minutes on each side and transfer on a wire rack to drain excess oil.
  2. Serve hot with sweet chilli sauce, vinegar dip or tomato sauce.

Recipe Notes

You can pan fry the fritters, if you don’t want to deep-fry them. Just put a bit of oil on a non-stick skillet and let them brown on both sides and make sure the middle is cooked through. The oil should not be so hot it smokes, as then the centre doesn’t cook.
